Wash the aubergines carefully and cut into very thin, regular slices. Flour and fry in plenty of boiling oil. Drain and leave to dry on paper towel. Cut the Piave Mezzano cheese into small cubes. Line the moulds with the aubergines, place the cheese in the middle and close the sformatino by placing another slice of aubergine on top. Pre-heat the oven to 180 °C and cook for 15 minutes. Serve on the plate, carefully placing the aubergine sformatino onto a little carefully arranged tomato sauce.
