Ingredients

  • 150 g (6 oz) Piave Medium
  • 300 g (12 oz) leeks
  • 200 g (8 oz) potatoes
  • 1.5 lt (3 pt) stock
  • 50 g (2 oz) butter
  • salt to taste

Preparation

4 servings – Medium difficulty

Clean and peel leeks and cut into thin rings. Peel, wash and dice potatoes. Melt butter in pot, add leeks, allowing them to wither. Add potatoes and sauté, then add boiling stock and cook for 30 minutes. Salt to taste and put soup into 4 soup bowls with diced Piave Medium. Allow soup to sit for 5 minutes then serve with croutons.
